I love simple meals that taste really good and do not take a long time to make. Maybe this is why I loved this taco salad! The only part here that takes some time is the chopping, but we went at it like a family and everyone helped. My sister is a vegetarian so this was a perfect meal for her – for anyone who isn’t, what about adding some chicken or beef on the side?
Ingredients:
- 6 cups green spinach
- 3 tomatoes
- 4 green onions
- ¼ cup red onion
- 1 red bell pepper
- shredded cheese
- tortilla chips
Directions:
- Chop all veggies
- Crush tortilla chips
- Add to a bowl and mix together
- Serve with shredded cheese
Optional:
- homemade salsa
- yoghurt mixed with taco seasoning and chopped cilantro dressing
- Chicken on the side
