I seriously love banana bread! Especially since I made a Nutella Swirl Banana Bread. I wanted to create the banana bread muffins as well and I found a great recipe where you actually cover the top with sugar/cinnamon mix. It just made the whole thing taste so much better!
Ingredients:
Muffins:
- 45 g sugar
- 50 g oik
- 2 eggs
- 1 banana
- ½ tsp vanilla powder
- 100 g flour
- ½ tsp baking soda
- ¼ tsp salt
- ¼ tsp ground cinnamon
Topping:
- 100 g sugar
- ¼ tsp cinnamon
- 14 g butter, melted
Directions:
- Preheat the oven to 190 C
- Add the sugar, oil and egg in a bowl and beat with a wire whisk
- Stir in the banana and vanilla powder
- Add the flour, baking soda, salt and cinnamon, mix
- Line a muffins tray with 6 muffin liners and fill them about ¾ full
- Bake for 17-20 minutes
- Remove cupcakes to a cooling rack and let them cool slightly
- In a small bowl, mix the sugar and cinnamon. Dip the muffin tops in melted butter and then into the sugar-cinnamon mix
- Serve warm
