Need a simple, healthy and cheap dinner? I totally recommend this Cauliflower soup. The first time we had it was during Christmas, when visiting some family friends. They served this as an appetizer, but it works totally for the main course as well (which I might add, we have had a few times since)
Ingredients:
- 1 Cauliflower
- 750 ml water
- 1 dl cream (lactose free)
- 3 tbs cornstarch
- 1.5 bouillon, veggie
- salt and pepper
Directions:
- Remove leaves and chop the cauliflower off the stem, in thick chucks
- Add cauliflower and water to a pot and bring to a boil
- Let it boil for 5 minutes
- In a separate bowl, stir together cream, and cornstarch
- Remove the cauliflower from the water
- Whisk in the bouillon to the cauliflower-flavored water
- Add the cream-cornstarch mixture and whisk until it is boiling
- Let it boil for 2 minutes, remove from heat
- Add salt and pepper to taste
- Optional: put to the side for later, reheat before use
- Add cauliflower chucks to soup bowls and pour the soup over.
- Serve, optional with garlic bread
