Hey great folks! It’s me again! Adrian from Life With Garnish! Here to share with you another simple and easy recipe. Last month it was my kid-friendly Banana Split Pancakes.
Today’s recipe is a very, very, very simple but oh so delicious Roasted Chicken with Vegetables recipe.
This recipe has a total of 7 ingredients, with 3 of them being seasonings and 1 of them the oil. Please don’t let the simplicity of this recipe deter you from wanting to give it a try. There’s just something about cooking the meat WITH the vegetables that makes ALL. OF. THEM. taste so much better!
It takes a little over an hour from start to finish to complete this hearty dish but if you are a family of, say…4 or 5, then cook this on one of your days off for some excellent leftovers. We don’t usually have leftovers.
See all that chicken ‘bout to be cooked up? This recipe is supposed to serve 8 but here’s why it doesn’t in my house. We are a team of 6 which includes 2 teenagers, 2 pre-teens and 2 adults. My husband is right under 6’8” tall, yes I said 6’8”!, and our kids aren’t too far behind him.
Over the past couple of months I have officially been placed last in the little height race (I’m 5’3”). I totally look like the child when we all go out in public so I’ve learned to wear heels just so people would realize I’m the mom, NOT my 15 year old daughter. Anywho, you can now understand why there’s so much chicken.
Doesn’t it come together so beautifully? Especially when its paired with fresh sautéed green beans?
