I had some time on my hands on Saturday before work and decided I needed to bake something. It was quite hard to figure out what because we did not really have a lot of ingredients on hand. However I did find to small boxes or raisins which gave me enough for this recipe. They were quite delicious but mine because a bit dry because I left them in the oven too long (oops). I made 6 muffins with this recipe, but I overfilled the cupcake liners so I think there should be enough for 7 or 8.
Ingredients:
- 30 g melted butter
- 1 egg
- 2 tbsp honey
- 1.25 dl milk
- 2.5 dl flour
- 1 dl oats
- 1 tsp baking powder
- ¼ tsp cinnamon
- 1.5 dl raisins
Directions:
- Preheat the oven to 180 C (350 F)
- Mix butter, egg and honey in a bowl
- Add flour, oats, baking powder, cinnamon and raisins
- Mix all ingredients
- Fill the muffin liners ¾ full. Bake for about 15 mins
- Let the muffins cool before serving
